Open Settings and tap Privacy choices. It appears where your region asks for it. The same choices are explained in the Privacy Policy.

Progress stays on your device, and in your own iCloud if you use iCloud saves. Open Settings, then iCloud saves, to see what is there.

Game Center is optional. The game plays the same without it.
